If you’ve ever wondered what food was like on
great-grandmother’s farm table, you want to take a look at A Study in Foods for Home Demonstration Clubs by Mrs. Cornelia C.
Morris, Tidewater District Agent. The 35-page booklet, published in 1919 by
Extension Service at N.C. State University, was used to help club members and
rural school teachers help girls learn to cook in a properly arranged kitchen.
This publication is on the web as part of an examination in
the changes in the way North Carolinians eat: 1910s to 1960. NC Eats is a
project of the North Carolina State University History Department.
